Super Simple Sauteed Kale with Lemon

Ingredients:
1 teaspoon coconut oil
1 cup curly kale, de-stemmed and chopped
1 teaspoon water
1 tablespoon fresh squeezed lemon (about ½ of a lemon)
½ teaspoon pink Himalayan salt
Instructions:
Heat coconut oil in a saute pan on medium-low heat. Add kale and water and cover to steam and slightly wilt kale. Approximately five minutes.*
Once wilted, add lemon juice and salt. Stir to combine oil and juice. Serve immediately.
