Green Salad with Oranges, Beets, and Apples

🍽️ Servings: 2-4

Ingredients:

  • 4 cups leafy greens*

  • 1-2 small oranges (I used mandarins), peeled and sliced into rounds

  • 3 small beets, peeled and julienned

  • ½ green apple, cored and thinly sliced

  • ½ cup feta cheese

  • ¼ cup pumpkin seeds

  • ⅓ cup Peach Miso Vinaigrette

Instructions:

  1. Add greens, oranges, beets, apples, feta, and pepitas to a large bowl. Drizzle vinaigrette and toss. 

  2. Serve immediately and top with freshly ground pepper, if desired.

💚The Healthy Bit: Oranges 💚

When most people think of the potential benefits of oranges, they think of vitamin C. However, oranges contain a wealth of health properties. They contain flavonoids which have anti-inflammatory properties that may help reduce chronic diseases. Oranges are a good source of potassium (approx. 174 mg) which helps regulate blood pressure, fluid levels, muscle contraction and nerve function. They are also high in fiber, which helps keep the digestive system functioning properly and prevents constipation. Oranges also contain carotenoids. These are antioxidants that may protect eye health and reduce the risk of macular degeneration.

*I used this week’s farmers market romaine but you can also use a combination of spinach, kale, chard, and/or any leafy greens.
