Miso Peach Vinaigrette

Ingredients:
3 tablespoons extra virgin olive oil
1 tablespoon + 1 teaspoon organic peach cider vinegar
1 teaspoon white miso*
1 pinch pink Himalayan salt (could also use kosher salt)
1-2 pinches ground pepper
Note - feel free to double this recipe depending on your dressing needs.
Instructions:
Combine all ingredients in a small mason jar and shake
Keep sealed in the fridge for up to three days
