Easy Refrigerator Dill Pickles

🍽️ Servings: one mason jar
Ingredients:
1 ½ cups water
1 ½ cups white wine vinegar (plus ¼ cup for cleaning)
4 teaspoons kosher salt or pickling salt
2 teaspoons dill seeds (optional)
6 Persian cucumbers, cut into ½” slices
4 cloves of garlic, peeled and left whole
1 tablespoon black peppercorns
3 large sprigs of fresh dill
Instructions:
Place cucumbers in a large bowl. Cover with water and add ¼ cup of vinegar. Leave two minutes and wash thoroughly.
Add equal parts water and vinegar, plus salt and dill seeds, to a small saucepan and bring to boil.
While brine is coming to a boil, add fresh dill, garlic, peppercorns, and cucumbers to a large Mason jar.
Once brine cools a bit, add to the Mason jar.
Refrigerate overnight. Use within three weeks.
