Easy Refrigerator Dill Pickles

🍽️ Servings: one mason jar

Ingredients:

  • 1 ½ cups water

  • 1 ½ cups white wine vinegar (plus ¼ cup for cleaning)

  • 4 teaspoons kosher salt or pickling salt

  • 2 teaspoons dill seeds (optional)

  • 6 Persian cucumbers, cut into ½” slices

  • 4 cloves of garlic, peeled and left whole

  • 1 tablespoon black peppercorns

  • 3 large sprigs of fresh dill

Instructions:

  1. Place cucumbers in a large bowl. Cover with water and add ¼ cup of vinegar. Leave two minutes and wash thoroughly.

  2. Add equal parts water and vinegar, plus salt and dill seeds, to a small saucepan and bring to boil.

  3. While brine is coming to a boil, add fresh dill, garlic, peppercorns, and cucumbers to a large Mason jar.

  4. Once brine cools a bit, add to the Mason jar.

  5. Refrigerate overnight. Use within three weeks.
